Critical Success The creature is 100% convinced/persuaded. Remember, convincing someone of a lie doesn't necessarily mean they believe it to be true, only that they believe you are sincere.

Success As a critical success but only 50%.

Critical Failure The creature is persuaded the opposite of what you attempted but acts with only 50% severity. For example, if you wanted them to imprison two people for a week, they'd imprison one person (probably you) for a week instead. If you wanted to sell them a teapot for 10 gp, they charge you 5 gp and convince you to buy their teapot instead.
